Sanding can help smooth out these imperfections and prepare the pan for proper seasoning. The process involves using sandpaper or a sanding block to gently remove any rough areas or old layers of seasoning. Start with a coarse grit sandpaper (around 80-120 grit) to address significant roughness or rust. Ensure you sand in a circular motion to achieve an even surface. Once the major imperfections are removed, switch to a finer grit (220-320 grit) to smooth the pan further.

It’s important to pay attention to the edges and any areas where food may stick. After sanding, the pan will likely appear dull or gray, which is normal. This is your cue to re-season the pan, as sanding removes the protective seasoning layer. To do this, clean the pan thoroughly with soap and water, then dry it completely to prevent rusting. Once dry, apply a thin layer of high-smoke point oil, such as flaxseed or grapeseed oil. Place the pan upside down in an oven preheated to 450°F (232°C) and bake it for an hour. Let it cool inside the oven afterward. This process creates a new non-stick coating that will improve with each use.
